If you can’t level up in Demon’s Souls yet, that’s simply because you still need to progress further. To level up in Demon’s Souls, you must first defeat the first boss of the Boletarian Palace, Phalanx.
How to Level Up in Demon’s Souls
Once you’ve defeated Phalanx, return to the Nexus and interact with the Maiden in Black. You’ll first find her near the first archstone. She may move to other areas down the line, but she’ll always be lingering within the Nexus.
When spoken to for the first time, she’ll then tell you to speak to the Monumental, who rests in the upper section of the Nexus. Return to the Maiden in Black after speaking with the Monumental and you’ll finally gain the ability to level up.
You can start leveling up by choosing the “Seek Soul Power” option when speaking to the Maiden and using your Souls as experience points.
In Demon’s Souls, you accumulate Souls by defeating enemies and bosses and collecting Warrior Souls. To put it simply, play the game as is by exploring every level and defeating every enemy and boss. The more you play, the more powerful your character will become.
